It is only a 5min walk from either JR Motomachi or Hanshin Motomachi station to one of Kobe’s delicious Ramen restaurants!
Having opened on October 2019, Zagin is still a relatively new restaurant in Kobe. They started their business in Osaka, and now have branches in Taiwan, Hong Kong and Beijing.
It is a small counter-style Ramen restaurant that can seat no more than 12 people at any one time. However, it is not tight squeeze between customers and seating is quite comfortable.
They serve three kinds of Ramen. 鶏Soba 880yen (Tori Soba), 飛魚出汁貝Soba 880yen (Agodashi Soba), 鶏つけ 900yen (Tori Tsukemen).

鶏Soba （Tori Soba）880yen
The soup base is 鶏白湯（Toripaitan). It is has a creamy and super rich taste! The brown colored ingredient is burdock chips. Doesn’t it look delicious? It comes with pork and chicken Chashu, along with shallots. They use a hand blender to stir the soup to give it a mellow flavor.
From where you sit in the counter, you are able to see how they make and prepare your ramen. I personally find this aspect an interesting and exciting part of small counter-style Japanese restaurants. You can enjoy the wait and anticipation for your ramen.
What is 鶏白湯（Toripaitan)?
It made from broth extracted from boiling Chicken bones like Tonkotsu. In a similar manner, Tonkotsu is made from Pork bones. 鶏白湯（Toripaitan) has a white creamy color.
飛魚出汁貝Soba（Agodashi Kai Soba） 880yen
It also looks delicious. Like the Tori soba ramen, it also comes with pork and chicken Chashu. Agodashi gets its name from: Ago means flying fish, Dashi means broth and Kai means seashells. Their soup base is made from fish stock and 3 different varieties of seashells. It is a light broth but you can really taste the fish flavor without familiar fishy smell. Included is a Wonton which you can really taste the seashells. I love it!
鶏つけ （Tori Tsukemen）900yen
The Tsukemen is a ramen where the broth and noodles are served separately in two different bowls.
I do not have an image of their Tsukemen as I have yet to try it. My apologies! I will update this post once I have experienced this ramen 🙂
